Low Calorie ,Low Point Margarita

 1 packet from Margaritaville Water enhancer packet ( Big Lots has them) as does Amazon

12 oz of cold water

ice 6 -7 cubes 

place water and water enhancer packet in magic bullet or blender with ice  and combine.

Rim your glass with lime juice and salt or sugar if desired and pour mixture in to enjoy.

You can add a shot of Tequila  if desired  - THAT WOULD ADD POINTS 

YOU CAN ADD XANTHAN GUM TO THICKEN IF YOU LIKE

Christmas Crack - Lightened Up

 1 mini lavash bread  I used Atoria Family Bakery mini whole grain and flax for 1 sp

I cant believe its not butter spray

1 -2 tbsp of Sukrin Gold brown sugar substitute  or brown sugar of your choice 

30 or so Lily chocolate chips

6 lily salted carmel chips 

Flavor God / holiday sprinkles

Spray your lavash with I cant believe its not butter spray well add your brown sugar and place in 400 degree oven for approx 3 mins or until bubbly . Add chips and return to oven to melt . Lily do not spread well for me so I just left them be. Top with sprinkles of choice and I used some flavor god chocolate donut and buttery cinnamon roll . 

The points are based on what you top with . Mine was 2-3 for the whole lavash on all plans

Cheese Danish - Weight Watchers Retro Cheese Danish

 1 slice of light bread for 1 sp I use 647 Italian 

2 tbsp of FF CottageCheese

1/2 tbsp of monk fruit sugar replacement

1/4 tsp of vanilla extract

dash of cinnamon and salt

Toast Bread  Lightly

Mix remaining ingredients and place on top of toasted bread and place in broiler until melted and bubbly about 3 mins ( keep you eyes on it ) 

1 sp on Blue and Purple

Big Mac Meat Loaf

 2 pounds of 85/15 ground beef  any other lean meat will reduce the points 

Light Thousand Island dressing 3/4 cup divided

1 egg

1/4 cup of quick oats

1 1/2 tbsp of everything but the bagel seasonings

1/2 cup cooked onions

1/2 cup chopped pickles and 1 tbsp pf pickle juice

1 cup of velveetta shreds divided 

Preheat oven to 350 degrees 

Mix all the above (save 1/2 cup of dressing and 1/2 cup cheese for the top of meatloaf.)

Bake for 40 mins and then add the remaining cheese and dressing and bake for an additional 5 mins 

if you cut into 10 servings its 8 sp  on Purple  9sp on Green and Blue based on the meat I use and if you use a leaner type it will reduce the points .

Watermelon Smoothie

  1 watermelon water enhancer packet

1/2 cup water

1/2 cup unsweetened cashew milk

1 tsp sugar free vanilla pudding mix

1/4 tsp xamtham gum

1 cup ice

place everything in blender and mix until blended , pour in glass and top with redi whip if you choose .

Cottage Cheese Dip (Snack)

 1/2 cup of fat free cottage cheese mine was zero points  ( or low fat adjust the points)

3 sun-dried tomatoes chopped

1 tbsp of Feta cheese of your choice

1/2 tsp of seasonings of your choice  ( I used basil, flavor god lemon garlic) to your tasted

I use rice crisp as dippers . 

The points are determined by what you use , Very easy

Chai Tea Latte Smoothie

  1 chai tea bag steeped in 1/2 cup hot water and let steep for 2 hours or so . Remove tea bag.

Place your cold chai tea in your blender or bullet with 

3/4 cup creamy unsweetened cashew milk 1 sp or milk of choice just adjust your points 

1 half and half  international delight mini creamer 1 is zero smart points

2 tbsp of Lakanto monk fruit sugar replacement

1 tsp vanilla extract

1 tsp of sugar free vanilla instant pudding mix

1/4 tsp cinnamon

1/4 tsp cardamom

1/4 tsp xamtham gum 

1 cup of ice

blend until ice is caused and mixture is thick . Sever with a squirt of redi whip 

1 sp on all plans to count for the milk

"Egg Nog" Stuffed French Toast -using my home made Cashew Nog

 First make a bath of my home made cashew nog or use Nog of choice just check the points as mine is zero for the amount I  use.

First make your stuffing  and this you can play with  to your taste

1/2  cup of non fat Greek Yogurt

1 tbsp of vanilla sugar free instant pudding

1 tbsp monk fruit sugar replacement  

1/4 tsp run extract

dash of cinnamon and nutmeg to your taste

Make you nog bread dip

1/2 up cashew nog base or nog of your choice

1 egg

1/4 tsp of run extract

dash of nutmeg and cinnamon 

mix well and dunk your 2 slices of light bread I used 647 both slices are 2 sp

cook on a hot griddle

place your stuffing between your bread and on top and dust with a touch more cinnamon and nutmeg and powered monk fruit sugar substitute

2 sp on Blue and Purple

Cashew Nog Mini Pancake Muffins

 1/3 cup of cashew nog base

1/3 cup of pancake mix of your choice  I  used a 3 sp brand 

1 egg

1 tsp of baking powder

dash of salt

1 tsp vanilla extract ( optional)

Pre-Heat oven to 400 degrees 

combine all ingredients and mix well. Place into sprayed mini muffin tin. Top with Cinnamon and fresh nutmeg as much as you like. Bake for 10 mins . Pop out and enjoy!

I got 11 mini muffins for 3 sp on purple and Blue and if you use egg whites then green as well.

Home-Made Cashew Nog a riff on traditional egg nog

 2 cups of unsweetened cashew milk you can use vanilla if you wish

2 large eggs

1 tbsp of honey substitute ( I used the Sukrin Gold syrup/honey substitute ) or real honey just adjust the points

1/2 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla

1/4 cup of monk fruit sugar substitute or sugar substitute of your choice just adjust the points

Place everything in a blender or bullet and combine for 2 minutes . Add to a medium size pot on the stove at very low heat and simmer not boil stirring frequently for 15 mins or until the temp comes to 180 degree. Take off heat and cool completely . B4 use or next day put back in blender or bullet and spin for 2 minutes and serve.  .

On Blue and Purple its 2 sp for the whole  recipe and Green its 6 sp .

Ginger-Bread Pancake Mini Pancake Muffins

 1/3 cup of Kodak Mix  3sp one I used the honey and oat - use what you have 

1 egg

1/3 cup unseated cashew milk

1 tsp of baking powder

1 tsp molasses

1/2 tsp ginger bread spice

dash of salt

1 tsp vanilla extract

Preheat oven 400 I use my toaster oven. 

Mix all ingredients   and place in a mini muffin pan lined  with liners . Bake for 10 mins and drizzle with the glaze below 

Topping 

1/4 cup of powdered monk fruit  and dash of milk to make glaze 

Make 12 mini muffins for 4 sp on blue and purple 6 on green unless you use egg whites

Pecan Pie in a Mug ---

 2 tsp of light butter , I used Land O Lakes with Canola Oil

1 egg

2 tbsp of sugar free pancake syrup

1 tbsp light Karo  corn  syrup

1 tsp vanilla extract

dash of salt

1 tbsp brown sugar substitute I used surkin gold

Combine all the above in a bowl.

Spray a small mug with non stick spray . Crush 1 sheet of graham crackers and sprinkle on bottom of the mug and pour the about on top  and top with 2 tbsp of chopped pecans and place in microwave and cook for 2 mins . ( if you want to add half the nuts inside and half on top that would work too) top with whipped cream .

8 smart points on Blue and Purple and 10 on green 





Ginger Snap Cheesecake Smoothie

 1 cup of unsweetened cashew milk or milk of your choice 1 sp

 2 tbsp of pure pumpkin

3 tbsp of non fat Greek Yogurt  or 1 scoop of protein powder

3 tbsp of monk fruit sugar replacement

1 tsp of molasses  1 sp

1 tsp of sugar free instant  cheesecake pudding mix

1/4 tsp of xantham gum

1/2 tsp gingerbread spice

dash salt 

6 drops of cheesecake flavoring  (optional )

10 ice cubes

Add everything in your bullet and blend ! Top with some whipped cream and a dash of ginger bread spice 

2 sp on blue and purple for the whole drink or 1 sp for half

Chocolate Pumpkin Dump cake in a Mug


Wet ingredients 

3 tbsp of pumpkin puree 

1 egg

3 tbsp monk fruit sweetener

1 tsp vanilla extract

1 tbsp almond milk

1 tbsp sweet cream  Splenda creamer ( you can just use more almond milk)

Dry Ingredients

1 tsp of baking powder

dash of salt

1 tsp pumpkin pie spice

1/2 tsp cinnamon 

1 tbsp of black cocoa  powder or cocoa  powder of your choice

1/4 cup of all purpose flour 

Combine all dry ingredients and set aside. Combine all wet ingredients well in a large mug that you sprayed well with non stick spry . Then sprinkle the dry ingredients on top and swirl . Cook in microwave for 3 mins and make sure cake it done.

 and cool completely . Top with whipped cream !

Mock Wendy's Frosty or Chocolate Banana Milkshake

 3/4 cup of unsweetened cashew milk or milk of your choice

1 tbsp sugar free chocolate instant pudding

1 tbsp of cocoa powder of your choice I used the Black

1 packet of of no calorie sweetener 

1 tsp vanilla

1/ 2 bananan

10 ice cubes.

1/4 tsp of xanthin gum if you want it a bit thicker

Place everything in your magic bullet and wiz.

1 sp for the milk and if you. chose to count the banana it would add another point

Beef Barley Soup in the Instant Pot

  • 1 tbsp olive oil
  • 1 lb stewing beef, cut into 1/2 inch pieces
  • 1 cup dry pearl barley
  • 1 (796mL) can diced tomatoes
  • 4 cups beef broth
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 tsp each salt & pepper
  • 2 tsp Italian seasoning
  • 1 (224g) package mushrooms, quartered


  • Add olive oil to Instant Pot and set to saute. Add beef and season with salt and pepper, then saute for 3-4 minutes until lightly browned. Add in carrots, celery, onions, garlic, Italian seasoning and mushrooms, stirring well to combine and sautéing another 2 min.
  • Add diced tomatoes, beef broth and pearl barley in that order. Turn off sauté mode and place lid and set to sealing, then pressure cook on high for 8 minutes.
  • Do a natural pressure release (you can also do a quick release but the beef may not be as tender) and then serve with a little bit of fresh parsley overtop and some crusty bread. Enjoy!

    Pumpkin Funfetti Cheesecake - A pound dropper recipe


    Mediavine

    Ingredients

    • 3 eggs or 3/4 cup liquid egg substitute 
    • 1 (32 oz.) container nonfat plain or Greek yogurt ( Fage or Chobani)
    • 1 (1 oz.) small box instant sugar free/fat free vanilla or cheesecake flavor pudding.
    • 1/2 Tbsp. vanilla extract ( I used maple)
    • 3/4 cup 100% pure canned pumpkin.
    • 1 tsp pumpkin spice
    • 1 tsp cinnamon
    • 3 Tbsp granulated white sugar substitute
    • 3 Tbsp or 1.5 oz. Duncan Hines or Betty Crocker spice cake mix( I used funfetti )

    Instructions

      1. Preheat oven to 350 degrees.
      2. In mixing bowl add eggs, extract, pumpkin spice, cinnamon, pumpkin, sugar substitute and beat well.
      3. Add yogurt, dry pudding mix. and cake mix (optional). Whisk together until well combined. 
      4. Pour into a lightly greased with non stick cooking spray pie dish or springform pan. I used a 9 inch springform pan.
      5. Bake for 30 minutes.
      6. Let it cool for about 15-20 minutes before covering it with plastic wrap.
      7. Let it chill overnight in the springform pan in the refrigerator.

        Servings: Makes 8 servings 

        GREEN: 1 SmartPoint per serving if using 3/4 cup liquid egg substitute or 2 SmartPoints per serving if using 3 whole eggs or 3 SmartPoints per serving if you add 3 Tbsp. spice cake mix

        BLUE: Zero SmartPoints per serving or 1 SmartPoints per serving if you add 3 Tbsp. spice cake mix

        PURPLE: Zero SmartPoints per serving or 1 SmartPoints per serving if you add 3 Tbsp. spice cake mix

    Hot Cocoa

     1 cup of unsweetened cashew milk or any milk of choice just know your points

    1 1/2 tsp of black unsweetened cocoa powder or cocoa of your choice 

    2 tbsp of monk fruit sugar 

    1/2 tsp vanilla extract or  1/4  tsp mint if you prefer

    redi whip for top 

    Heat milk and sugar on stove and let come to a gentle simmer, Place cocoa in mug with extract and add hot milk and stir to combine . Add whipped cream if desired or marshmallow ( know the points)

    Bittersweet Chocolate and Peanut butter energy bites

     1 cup of old fashioned Oates toasted in a hot skillet and cooled ( set aside in a large bowl)

    1 can of rinsed and drained chick peas

    2 tbsp of unseated coco powder

    1/4 cup of water

    2 tbsp of monk fruit sweetener

    1/2 cup of pb2 powder

    3 1/2  tbsp of honey substitute

    1 tsp of vanilla

    dash of salt

    1/4 cup of lily chocolate chips

    place chick peas and water in your food processor and process until smooth , add coco, monk fruit, vanilla, pb2, honey substitute and dash of salt. Process and scape bowl until mixture is smooth. Take mixture and add it to the bowl with the oats and chocolate chips and combine well . refrigerate for 20 mins and then using a tablespoon make into balls. I did get 18 balls 

    On Purple these are 1 point for each one On Blue they are 1 ball for 1 sp 2 balls for 3 sp 3 balls for 4 sp

    On Green they are 1 ball for 2 sp 2 balls for 4 sp 3 balls for 6sp

    Pineapple Upside-Down Donuts

    6 pineapple rings I used fresh but I think canned would work better

    3 tsp of brown sugar . 1/2 tsp per donut cavity

    Batter

    1/2 cup of all purpose flour

    1 egg

    1 tsp vanilla extract

     1 tsp baking powder

    1/3 cup monk fruit sweetener

    1/2 tsp salt

    1/2  tsp cinnamon

    1/3 cup of vanilla unsweetened cashew milk or milk of choice

    Preheat oven to 350

    place 1/2 tsp of brown sugar in bottom of each donut cavity and top with one pineapple ring 

    In a medium bowl combine batter ingredient and mix well

    place batter in all 6 donuts cavities evenly and bake for 20 mins

    Let cool for  a few minutes  and flip on a wire rack to cool and I just topped with powdered monk fruit .

    Pumpkin Dump Cake - A WW Recipe

      1 28 oz can of pure pumpkin 

    1/2 cup of brown sugar substitute

    4 eggs

    1 1/2 cup of unsweetened cashew milk

    1 tsp vanilla

    1/4 cup of sugar free pancake syrup

    1 tsp pumpkin pie spice

    1/2 tsp cinnamon 

    1/2 tsp salt

    1 box of sugar free yellow cake mix

    Pre-heat oven to 350.

    Combine first 9 ingredient in a large bowl . Spray a 9x13 pan with pam spray. Pour batter from bowl in the prepared pan . Top with dry cake mix  and swirl so you can see batter . Spray the top liberally  with pam spray . Place in oven and bake for 1 hour.

    Cut into  12 servings for 3 sp a slice on purple and blue

    Frozen Raspberry Lemonade

      1 water enhancer raspberry Lemonade packet

    1/2 cup water

    1/2 cup unsweetened cashew milk or milk of choice (check for points)

    1 cup ice

    1/4 tsp xantham gum 

    Mix water and flavor packet in bullet until dissolved and add the milk, xantham gum and ice  and wiz in bullet until think and ice is dissolved . Serve

    Cranberry Sauce -homemade for zero points - taken from Ina Garden recipe Cranberry Fruit Conserve

    12 oz bag of fresh Cranberries

    1/2 cup of Lakanto Monk Fruit Sugar Substutue

    1 orange zest and juice

    1 lemon zest and juice

    1 apple diced 

    dash of salt 

    1 cup water 

    Place cranberries , monk fruit, and water in a heavy bottom sauce pan and bring to a boil and boil on a med heat for aprox 15 mins until the cranberries break down. Add the juice and zest of the lemon and orange and the died apple and cook for another 15 mins. Let cool and it will thicken the more it cools

    Caramel Apple Smoothie

     1/ 4 cup apple cider or apple juice

    1/4 cup unsweet apple sauce

    1/2 tsp apple pie spice

    1/2 cup unsweet cashew milk

    1 cup ice

    Topping: whipped cream and sugar free caramel ( that determines your points  on how much you use)

    Hungry Girl's Thanksgiving Casserole

     1 pound boneless skinless turkey breast cut into bite sized pieces

    1 1/2 cups stuffing mix (about 1/2 of a 6 oz box)

    1 cup chicken or turkey gravy

    1 cup chopped apple

    1 cup onion ( I grated mine)

    1/4 cup of dried cranberries chopped ( I made homemade cranberry  sauce)

    Seasonings:

    1 tsp poultry seasoning

    1/2 tsp garlic powder

    1/2 tsp salt and black pepper


    Pre-heat oven to 350 degrees . Spray a 8x8 baking pan with non stick spray.

    In a large bowl mix all ingredients and seasonings.

    Transfer mixture to the prepared pan and smooth out the top. Cover with foil and bake for 30 mins. Remove foil and continue to bake for 10 more mins and make sure turkey is fully cooked,

    Make 4 servings

    Carmel Apple Pancake Muffins

     1/3 cup of Kodak Mix  3sp one I used the honey and oat

    1/4 cup of apple cider

    2 tbsp of unsweetened apple sauce 

    1 egg

    1 tsp of baking powder

    1  tsp apple pie  spice ( I get mine from the amish bulk store)

    dash of salt

    Add 2 tbsp monk fruit sugar replacement if you want sweeter muffins  (I did not)

    Topping 

    1/2  tbsp chopped nuts of choice  pecans or walnuts

     granular sugar replacement and cinnamon  if desired 

     1 tbsp sugar free Carmel topping 



    combine all ingredients and mix well . Preheat oven to 350 degrees

    place your liners in your mini muffins pan an spray with non stick . Evenly distribute batter in each well. This recipe makes 12 mini muffins . Bake for 10 mins . Pop out and dip in granular sugar substitute and cinnamon or drizzled with sugar free Carmel , zero point about but feel free to add more and adjust the points add chopped nuts

    5 sp on Blue and Purple and 7 on green if using the whole egg.

    Trader Joe's Lentil Dip Appetizer

    1 package of Trader Joe's Steamed Lentils (ready to eat)

    1 package of Trader Joe's Mild Salsa Especial  

    feta cheese . I used the imported Dodoni  Feta in brine . (the amount you use determines the points) 

    combine everything . Serve cold . You can half this recipe . 

    The points is determine on the amount of feta you use . In my video I did a half about and it was 5 sp of feta for the whole dip on blue and purple , green has to count the lentils .

    Katie's Version 

    1 package of the TJ Steamed lentils 

    1 package of TJ Fresh Bruschetta  tomato sauce sold by the pizza dough

    Feta cheese the amount you use determines your points

    Orange Creamsicle Cheesecake Smoothie

     1 Sunkist Orange Water Enhancer packet ( I get mine at dollar tree) YOU CAN USE 1/2 PACKET FOR A LIGHTER TASTE IF YOU CHOOSE

    1/2 cup water

    1/2 cup of unsweetened vanilla cashew milk 

    1 tsp of cheesecake sugar free instant pudding mix

    4 drops of cheesecake flavor drops

    1/4 tsp of xantham gum 

    1 cup of ice

    Add everything to your bullet or blender and blend well . I mix my powder and water first . 

    Sever with some whipped cream 

    ZERO SMART POINTS ON ALL PLANS / THERE IS NO FRUIT IN THIS SMOOTHIE

    Pumpkin Bear Claw Danish

     1 cup of all purpose flour

    1 1/2 tsp baking powder

    1/4 cup of nf greek yogurt 

    1/2 tsp salt

    1 egg

    2 tbsp of pure pumpkin

    1/2 tsp pumkin pie spice

    1/2 tsp cinnamon 

    3 tbsp of brown sugar substitute 

    combine everything till a dough forms . Splint into 2 . Roll each out and spry with butter spray and add cinnamon and sugar substitute and pumpkin pie spice . Roll up and cut into 2 rolls. Do the same with the other half . Bake 350 for 18 mins, Cool 

    Make a glaze  with powdered monk fruit and water or milk of choice . 4 bear claw 3 sp each on Blue and Purple

    Pina Colada Zero Point Smoothie

     1 packet of Margaritaville Pina Colada Water Enhancer

    1/2 cup of water

    1/2 cup of unsweetened cashew milk

    1 tsp of sugar free instant cheesecake pudding mix

    1/4 tsp of xantham gum

    1 cup of ice

    Place everything in blender or bullet and blend until smooth .

    Pumpkin Butter - Lightened Up Pumpkin Butter

     15 oz Pure pumpkin

    1 cup of unsweetened Applesauce

    1/4 cup of sugar free pancake syrup

    1/2 cup swerve brown  or brown sugar substitute of your choice

    2 tsp pumpkin pie spice ( I used 1 tsp of Pumpkin pie spice and 1 tsp cinnamon ) 

    1 tsp ground ginger'

    1 tsp vanilla

    1/2 tsp lemon juice

    You can put it all in a slow cooker with the lid cracked open because you want it to cook down. I chose to simmer on the stove till it cooked down . It cooked for a hour . Great on toast and oatmeal . 

    its zero points unless you eat the whole bowl




    Pumpkin Cheesecake Smoothie 1 sp on all Plans

     1 cup of unsweetened vanilla cashew milk or your milk of choice  adjust points if you need too

    2 tbsp of pumpkin puree

    2 tbsp of swerve brown sugar replacement 

    1/4 tsp scant  pumkin pie spice

    1/4 tsp. cinnamon 

     1/2  tsp vanilla extract

    1 tsp of cheesecake sugar free  instant pudding mix

    4 drops of cheesecake flavoring 

    1/4 tsp xantham  gum 

    1/2 cup of ice 

    I topped with a drizzle of sugar free maple syrup and a squirt of redi whip and some Flavor God Pumpkin pie seasoning 

    This whole drink is 1 sp on all plans.

     1/2  cup cold water

    1/2 packer of Sunkist pineapple  water enhancer ( I get mine at the dollar tree) 1/2 tsp

    1 cup ice

    1/2 cup of unsweetened vanilla cashew milk or milk of choice

    2 tbsp of NF plain greek yogurt

    1 tsp of sugar free cheesecake pudding mix

    3 drops of cheesecake flavorings ( I purchased on amazon and its listed on my Amazon store) Its optional

    Combine Everything in a magic bullet and blend . The more ice the thicker it becomes.

    Garnish with redi whip and graham cracker crumbs

    Carrot Cake Steel Cut Oats in the Crockpot

     10  cups of Water

    2 cups of Steel Cut Oats

    23 oz Unsweetened Apple Sauce

    1 10 0z bag of Shredded Carrot

    1/3 cup of Swerve Brown Sugar Replacement

    2 tbsp Cinnamon 

    1 tbsp Pumkin Pie Spice

    1/2 tsp salt

    1 8 oz can Crushed pineapple drained

    1 cup of Raisins  ( optional)

    Combine all ingredients in a 7-quart or larger slow cooker. Cook on low for 6 hours.

    Makes 16 1 cup servings 

    Purple 0 sp Blue 2 sp Green 2 sp 

    You can top with shredded coconut ,whipped Cream cheese,  nuts or maple syrup ( just adjust the points )

    Pumpkin Pancake Mini Muffins 12 mini muffins

     1/3 cup of Kodiak cakes pumpkin flax power cakes mix

    1 egg or 3 tbsp of egg substitute

    1/3 cup of unsweetened vanilla cashew milk

    1/2 tsp baking powder

    dash salt

    1/4 tsp pumpkin pie spice

    1/4 tsp cinnamon,

    1/2 tsp vanilla extract

    Pre -heat oven to 400. Mix all ingredients  well and place in a well sprayed 12 cup mini muffin pan .

    Bake 10-12 mins until toothpick come out clean .

    Makes 12 mini pancake bites

    4 sp on blue and purple and 6 on green 

    Glaze : mix powdered monk fruit with milk of choice to your desired consistency . I also added unsweetened black coco powder to half . 



    Tomato Salad / Tomato Bruschetta /Pico

     10 roma Tomatos diced

    onion of your choice and amount of your choice

    t tsp chopped garlic

    1 green bell pepper diced

    1 1/2 table EVOO

    2 tbsp apple cider vinegar or balsamic or red wine  what ever I am in the mood for that day


    Place diced tomatoes in a colander add salt and allow for water to drain for approximately 20 mins. 

    Place everything in a bowl add seasonings of your choice ( fresh basil and parsley if you can )

    I do use Italian seasonings , salt and fresh ground pepper

    If you make pico add a jalapeño  pepper and cilantro 

    The longer it sits the better it gets!

    Lavash Cracker/ Chips

      1 sheet of Joesephs Lavash Flat bread  2 sp 

    pam spray 

    spices of your choice or sugar substitute and cinnamon for a sweet chip

    I use a pizza cutter and cut my lavash into squares. 

    Pre-heat my convention oven to 375 or regular oven to 400

    I then place them on a foil lined tray sprayed with pam. I spray the tops with pam and sprinkle my flavorings of choice on top.

    Bake for 4 mins take out flip and re spray and season bake for another minute or so. Depends on your oven temp. You want them golden brown . Keep an eye on them they will burn fast.

    Pancake and "Sausage Mini Pancake Muffins

    1/3 cup of Kodiak cakes Whole Wheat Oat&Honey Frontier flapjack and waffle mix  (3 sp)

    1/3 cup of unsweetened vanilla cashew milk of milk of choice

    1 egg or 3 tbsp of egg substitute

    1 tsp baking powder 

    dash of salt 

    1 tsp of maple extract

    1/2 cup or less of Morning Star Farms plant based crumbles or sausage of your choice just adjust points the ones I use was just 1 sp


    Preheat oven to 400 degrees

    Combine everything in a bowl (except sausage ) place in a muffin like 12 cup mini muffins . Top with sausage evenly. Bake for 10 mins

    Pop out and let cool and serve with sugar free pancake syrup

    4 sp on most plans

    Pop tart in a Mug

     4 tbsp of all purpose flour 

    1/2 tsp baking powder

    1/2 tbsp lakanto monk fruit sugar replacement

    dash salt

    Mix in a small mug that has been sprayed with non stick spray.

    add

    2 tbsp unsweetened vanilla cashew milk  or milk of choice

    1 tbsp unsweetened applesauce

    mix well and push the batter to the side and then add 

    1/2 tbsp of jam of choice 

    and cover over with batter. 

    cook in microwave for 80 seconds 

    Glaze

    2 tbsp of powered monk fruit sugar replacement

    milk of choice  1/2 tsp -1 tsp to make glaze as thin or as thick as you like 

    mix and glaze your mug tart and sprinkle with some rainbow sprinkles 

    3 sp on all plans 



    Double Chocolate Pancake Muffins with a Peanut Butter Glaze

     1/3 cup of Dark Chocolate Kodiak Mix  4 sp

    1/3 cup of unsweetened Vanilla Cashew Milk

    1 egg or 3 tbsp of egg white substitute 

    1/2 tsp vanilla extract

    1/2 baking powder

    dash of salt

    1 tbsp of black coco powder or special dark coco powder

    1 tbsp of monk fruit  sugar substitute 

    Mix everything in a bowl and let sit for a few mins, I used my 12 mini muffin pan with my silicone lines sprayed with pam. Distribute  mixture evenly between them  I top with 1 lily chocolate chip and some chocolate sprinkles ( not enough to count ). Bake @ 400 degree for 10 mins.

    Glaze (optional )

    2 tbsp of PB2  1 sp

    1 tbsp of powdered monk fruit 

    cashew milk to make the glaze for a thick or as thin as you like. 

    Drizzle over or dip into your choice!

    Peach Amaretto Chia Seed Jam - Sugar Free

     4 very large peaches approx. 5 cups peeled and chopped

    1/4 cup of water

    1/4 cup of brown sugar replacement  I uses swerve 

    dash of salt

    1/4 tsp cinnamon 

    1 tbsp of amaretto mixes with 2 tsp of cornstarch to make a slurry  ( 3 sp) 

    1 tbsp of Chia seeds  ( 2sp)

    Place your peaches and water in a large heavy bottom put and bring to a boil for about 25 mins , I used a potato masher and mash them to my liking . ( you can make it as chunky as you like) I them added the remainder of the ingredients and let simmer for 5 mins on low . Keep stirring . Let cool and place in fridge  for up to 2 weeks . 

    The whole recipe is 5  sp on all plans  for the amaretto and the cornstarch .  If you just use a few tbsp at a time you should be fine to count as zero .

    Cinnamon Roll in a Mug

     1/ 4 cup of all purpose flour or kodiak pancake mix

    1/4 tsp baking powder

    2 tbsp of unsweetened vanilla cashew milk or milk of choice 

    1 tbsp of sugar free pancake syrup

    1/4 tsp vanilla extract

    dash of salt

    1 tsp light butter

    1/2 tbsp of brown sugar substitute mixed with 1/4 tsp cinnamon 

    Spray a microwave mug well with cooking spray . Add all ingredient and mx well , If too think you may add a touch more milk to give you a nice batter.

    Top with another n 1/2 tbsp brown sugar substitute mixed with 1/4 tsp cinnamon swirl with a knife on top

    cook in microwave for 1 minute 25 seconds .

    Chai Spiced Mini Pancake Muffins

     1/3 cup Trader Joes Protein pancake mix 

    1/3 cup unsweetened vanilla cashew milk

    1 egg

    1 tsp baking powder

    dash of salt

    1/2 tsp cinnamon

    1/2 tsp cardamom

    dash of ginger powder

    1 tsp vanilla extract

    dash of flavor god buttery cinnamon roll (optional)

    1 tsp of crushed nuts ( optional )

    Pre-heat oven @400 Mix all the above in a bowl and let sit for 5 mins. Then place in a 12 mini muffins  tin with liners and bake for 10 mins, you can eat them as is with sugar free syrup or you can glaze with some powdered monk fruit sugar replacement mixed with cashew milk like I did for zero points

    12 mini muffins for 3 sp on Blue and Purple and 5 on green if you add nuts like I did them I added a point on all plans .

    Chocolate Party Cake Loaf

     1 bananan mashed 

    1 tsp cake batter extract 

    3 tbsp egg substitute or  1 large egg

    dash of salt

    1 tsp baking powder

    1/4 cup of all purpose flour

    1 1/2  tbsp of coco powder of choice I used the black coco powder

     1 tsp  of instant coffee ( optional )

    1/4 cup of Lakanto Monk fruit sugar substitute granular 

    1 tbsp of rainbow sprinkles

    Pre heat oven to 350 degrees

    Mix everything well and place in a mini loaf pan  that has been sprayed with no stick spray . 

    Sprinkle with 13 lily chocolate chips and  a few more sprinkles

    Bake for 27 minutes . Check with a toothpick for doneness. 

    Cake is good as is. I did frost my cake with 2 tbsp of pb2 mixed with 1 tbsp pf powdered monk fruit sugar substitute . I added cashew milk to get the  consistency I was looking for for frosting . You could also use marshmello  fluff . just adjust your points . The Pb Frosting will add 1 sp to your 4 sp cake on all plans based on this specific recipe .

    Matcha iced Latte

     2  tsp of matcha powder

    1 cup of unsweetened vanilla cashew milk ( milk of choice ) as long as its 1 sp or adjust points

    1 tsp vanilla extract

    2 tbsp of monk fruit granular sugar substitute 

    Place all ingredients in magic bullet with 1/2 cup of ice and blend well . Place in a. glass filled with ice and serve with a squirt of redi whip .

    Creamy Balsamic Vinaigrette Low in Points

     1/2 cup non fat Greek Yogurt

    1/2 cup balsamic vinegar 

    2 tbsp of extra virgin olive oil

    1 tsp garlic  minced or grated or just use powder

    2 tsp of Dijon mustard 

    dash of salt and pepper


    Mix everything in a mason jar well and store in fridge for 10 days

    2 tbsp is 1 sp 3 tbsp is 2 sp and 4 tbsp is 3 sp on Blue and Purple
