Double Chocolate Pancake Muffins with a Peanut Butter Glaze

 1/3 cup of Dark Chocolate Kodiak Mix  4 sp

1/3 cup of unsweetened Vanilla Cashew Milk

1 egg or 3 tbsp of egg white substitute 

1/2 tsp vanilla extract

1/2 baking powder

dash of salt

1 tbsp of black coco powder or special dark coco powder

1 tbsp of monk fruit  sugar substitute 

Mix everything in a bowl and let sit for a few mins, I used my 12 mini muffin pan with my silicone lines sprayed with pam. Distribute  mixture evenly between them  I top with 1 lily chocolate chip and some chocolate sprinkles ( not enough to count ). Bake @ 400 degree for 10 mins.

Glaze (optional )

2 tbsp of PB2  1 sp

1 tbsp of powdered monk fruit 

cashew milk to make the glaze for a thick or as thin as you like. 

Drizzle over or dip into your choice!
