Mini Chocolate Loaf

1 banana mashed                                            1/2 tsp instant coffee
1 egg                                                                1 heaping tbsp of NF Greek yogurt
1/4 cup of AP flour                                          1 tsp vanilla extract
1 tsp baking powder                                         1/2 tsp cinnamon 
1/2 tsp salt
1 1/2 tsp unsweetened special dark cocoa powder
1 1/2 tbsp of monk fruit sweetener
 
Preheat oven to 350 degrees
spray your mini loaf pan with non-stick spray
Combine all ingredients and mix well and pour into prepared pan and bake for 25 mins and check with a toothpick for doneness. Cool for 10 mins and remove from pan and place on a wire rack to cool completely. Very moist.

Trader Joes Quick Stir Fry

TJ  Veggie Fried Rice  1 1/4 cup.     6 points
  TJ Soycutash.  1/2 cup.  0 points
8 Chicken Cilantro Wontons.  3 points
2 tbsp soy sauce
1 tsp squirt ginger
1 tsp of garlic

Add 1 tsp oil olive to a hot pan. Add frozen rice and soycutsh and cook for 4-5 mins. Add wontons and soy sauce, ginger and garlic and cook until heated through. You can add seasons of choice  and possibly peanuts  and even a scrambled egg.

Total points  9 smarts points on Blue

Eggplant Caponata

 Ingredients
 Eggplant– 1 (1 1/2 pound), cut into 1/2″ cubes. Also, it could be peeled.) 
 Olive Oil– 1/4 cup.
 Onion- 1 medium diced.
 red bell pepper diced
 Garlic- 2 cloves chopped.
 Celery- 1 cup chopped.
 Green Olives– 1/3 cup chopped. Preferably Sicilian or Italian olives.
 Diced Tomatoes– 1 14-15 ounce can or 1 3/4 cup chopped. Using canned tomatoes allows us to use the juice. However, you could add a bit of tomato sauce or paste to your fresh tomatoes instead. 
Red Wine Vinegar– 3 tablespoons.
 Capers  – 1 1/2 tablespoons. 
Italian Seasonings as needed.
I added some whole baby carrots to take any acid taste away

Heat the olive oil in a large skillet until hot. Add eggplant and cook for approx 5-7 mins. Add onion, pepper, celery, and garlic and cook for approx 15 mins.  Add  the remainder of the ingredients and cook for 20 mins and has thickened



Meatballs with Sunday Gravy

1 lb of ground beef I used the 85/15
2 slices of bread I used the 647.             1/4 cup of 1 % milk
1 cup of Parmesan cheese
2 eggs
1 tsp dried basil
1 tbsp dried parsley
fresh black pepper
1 and 1/2 tbsp fresh garlic


Add your milk to your bread and combine. Add meat and the rest of the ingredients and combine well but do not over mix. Roll into balls. I get 25 balls. Place on a grease cookie sheet and bake @ 400 degrees for 15 mins and add to sauce.
If you get 25 meat balls they will be 2 sp each on the blue plan

To Make your sauce
2  28 cans of crushed tomatoes
1 3 oz can of tomato paste
1 16 oz can of beef broth
2 tbsp of chopped garlic
carrots
salt/pepper


Combine all ingredients  and mix well. Add browned meat like pork country ribs, Italian sausage and meatballs. Cook all togeher for approx 2- 3 hours on a low simmer
I count this sauce as zero in my world

Baked Pumpkin Oat Protein Bars

Dry Ingredients

1 1/2 cup of rolled old fashioned oats
1 1/2 cup of quick oats
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1/2 cup Lakato Monkfruit Sweetener
2 scoops of Devotion Nutrition Angel food cake protein powder

    WET Ingredients
15oz can pure pumpkin
1/4 cup of egg beaters or 2 large eggs
1 medium banana mashed
 1 tsp vanilla extract
1 cup unsweetened vanilla almond milk

combine dry ingredients.
Combine wet ingredients and mix with the dry ingredients
place in a greased 9x13 pan ( I topped mine with Lily Chocolate chips)
 and bake @ 350 degrees for 25 mins and check with a toothpick
It makes 12 bars for 2 sp each on Blue or 24 mini bars for 1 sp on blue
on Purple when you make 12 bars it 0 point for 1 and up to 4 bars for 1 sp
on Green when you make 12 bars 1 bar is 2 sp and 2 bars is 5 sp 3 bars 7sp
