Creamy Balsamic Vinaigrette Low in Points

 1/2 cup non fat Greek Yogurt

1/2 cup balsamic vinegar 

2 tbsp of extra virgin olive oil

1 tsp garlic  minced or grated or just use powder

2 tsp of Dijon mustard 

dash of salt and pepper


Mix everything in a mason jar well and store in fridge for 10 days

2 tbsp is 1 sp 3 tbsp is 2 sp and 4 tbsp is 3 sp on Blue and Purple

Zero Smart Point Root Beer Float

1/2 packet of A & W  root beer water enhancer  ( use more if you wish)
1/2 cup of cold water 
1 cup of ice
1/2 cup of unsweetened vanilla cashew milk

Mix water with root beer packet and mix well. Add milk and ice and mix well. You can add to a magic bullet if you wish to make it a frozen float.
Top with Redi whip

Brownie Batter Hummus

2 cans of rinsed  and drained chick peas
1 package of sugar free instant  chocolate fudge  pudding.  (3 sp)
1/2 cup  of sugar substitute granular  - I used Lakanto Monk Fruit
1 tsp vanilla extract 
dash of salt 
2/3 cup of unsweetened vanilla cashew  milk. (1 sp)
2 tbsp  black  un sweetened coco powder ( you can use Hershey Special Dark Un sweetened  coco powder 

Add chickpeas to your large food processor and plus until sand like texture. Add the remainder of the ingredients and blend until smooth consistency . Scrap the bowl down several times .
place in a bowl and keep in fridge. You can top with sprinkles and or nuts or lily chocolate chips 
 

The whole amount is 4 sp. I figure 1/3 cup is zero. on Blue and Purple 

 Serve with pretzels and or fruit or graham
 crackers.

Zucchini Chocolate Donuts

1/2 cup of kodiak dark chocolate power cakes mix
1 egg
1/2 cup of unsweetened cashew milk
3 tbsp of monk fruit sweetener
1 tsp vanilla
2 tbsp of non fat Greek Yogurt
dash of baking powder
1/3 cup of shredded zucchini dried and water squeezed out 

mix all ingredients well . Place in the 6 wells of a donut pan and bake 350 degrees for 15 minis . Make sure they are fully baked by checking with a tooth pick.

 1 sp each on blue and purple




Zucchini Mock Crab Cakes

1 cup of seasoned  bread crumbs ( panko bread crumbs may lower the over all points)
1/4 cup of ap flour
1 tsp baking powder
1 1/2  tsp old bay seasonings
2 cups of shredded Zucchini dried and with the water squeezed out
1/2 an onion greeted or diced
1/3 cup of celery 
1 tbsp of light butter
1 egg beaten 

Combine all ingredients and you can pan fry or bake . I made mine in my mini  dash  waffle iron . I got 10 crab waffles .
on blue  1 waffle is 1 sp and 2 waffles are 3 sp  3 waffles are 4 sp.


Zucchini Banana Bread in a mini loaf pan

1 mashed banana  or 1/3 cup unsweetened applesauce 
1 egg
1/4 cup of quick oats or rolled old fashioned 
1 tsp baking powder
dash of salt
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup shredded zucchini
nuts and mini chocolate chips are optional  

Make sure your zucchini is as dry as you can get it . Then mix everything well and place in a mini loaf pan sprayed well with pam spray . Bale @350 degrees for 30 minutes and check for done ness with a toothpick .

2 sp on Blue and purple  and 4 on green using the egg.

Banana Flan for one

1 banana mashed
1 egg or egg substitute
1 light laughing cow cheese wedge (1 smart point 
1 tsp vanilla extract
3 tsp of Lakanto Monk Fruit Granular 
1 tsp baking powder
1 tsp flour
dash of salt

Combine all ingredients well and place in a mug sprayed with no stick spray. Cook in microwave for 2 minutes . You can eat warm , or cold its up tp you. I topped my flan with sugar free Carmel . You can top as you wish just adjust the points .
