Pound Dropper's Chocolate Mocha Funfetti Cheesecake

Ingredients

  • 3 eggs
  • 3 cups nonfat plain Greek yogurt or nonfat plain yogurt ( I recommend Fage or Chobani)
  • 1  (1 oz.) small box instant sugar free/fat free chocolate fudge pudding mix
  • 1/2 Tbsp. vanilla extract
  • 1 tbsp special dark unsweetened coco powder
  • 3 Tbsp. zero point white granulated sugar substitute
  • 1 tsp of instant espresso coffee
  • 3 tbsp of Funfetti cake 
  • 1/2 tbsp sprinkles and 1/2 tbsp of sprinkles for topping 
    1. Preheat oven to 350 degrees.
    2. In mixing bowl add eggs, sugar substitute and extract & mix well using a wire whisk.
    3. Then add yogurt, & dry pudding mix. coffee and cake mix  Whisk well.
    4. Pour into a lightly greased with non stick cooking spray pie dish or SPRINGFORM PAN. I used a 9 inch springform pan.
    5. Bake for 30 minutes. ( It may look jiggly but once it’s chilled, it will set.)
    6. Let it cool for about 15-20 min before covering it with plastic wrap
    7. Let it chill overnight in the refrigerator.

    Servings: Makes 8 servings 

    GREEN: 2 SmartPoints per serving or 2 servings for 5 SmartPoints

    BLUE: 1 SmartPoint per serving or 2 servings for 1 SmartPoint 

    PURPLE: 1 SmartPoint per serving or 2 servings for 1 SmartPoint

Chocolate Donut Ice Cream Sandwich

First make your chocolate Donuts1/2 kodiak power cakes min in dark chocolate
1/2 cup unsweetened almond mink or cashew milk
1 egg
1 tsp baking powder
1 tsp unsweetened coco powder  I used the special dark
1 tsp of instant coffee I used instant espresso powder
3 tbsp monk fruit sugar substitute
1 tsp vanilla extract
1/4 tsp cinnamon

Pre heat oven to 350.
Combine all ingredients well and let sit for 5 mins. Get your pan sprayed with non stick spray . Distribute the batter between all 6 donuts cavities.
I did top mine with a few lily dark chocolate chips.
Bake for 11 mins
Let cool in pan for 4 mins and then carefully remove to cool completely.

Place 2 donuts on your oven or toaster oven or air fryer to toast a bit

lay down first donut place 1/2 tbsp of sugar free Carmel syrup on top and 1/3 of ice cream of choice ( the one I used was 2 sp) I out a squat of FF redi whip and the other half tbsp of SF Carmel syrup and topped with other donut !
5 sp on Blue and Purple for the  sandwich made this way.

Frozen Hot Chocolate

1 cup of unsweetened vanilla cashew milk or any milk of your choice ( 1 sp)
2 tbsp of unsweetened Hershey special dark coco powder 
4   tbsp of Lakanto  monk fruit sugar substitute granular ( lakanto is zero not all monk fruit is)
1 tsp vanilla extract imitation
dash of salt 
1 - 2 cups of ice . Depends on how thick you like it 

Place everything in your magic bullet or blender  and process .

Banana Mini Miracle Loaf with variations

1 mashed banana 
1 egg
1/4 cup quick oats
1/2 tsp cinnamon
1 tsp vanilla extract
 1/2  tsp baking powder
1 tbsp monk fruit sugar replacement  
1 tbsp non fat Greek Yogurt 
dash of salt

combing all ingredients and place in a mini loaf pan that is sprayed with pam. I sprinkle with 1 tsp of crushed hemp hearts and 13 lily chocolate chips.  Bale 350 degrees for 25 minutes. This loaf is 2 sp for the whole loaf for blue plan 

Variations
PB mini loaf 
The above recipe plus I added 2 tbsp of PB2 and changed the sugar to brown sugar replacement
This bread bread bakes the same time and is 3 sp on Blue

Basic OverNight Oats

1/2 cup of either rolled oats or quick oats . (I do a mix of both)
1/2 cup of unsweetened vanilla cashew milk or other milk of choice just add points if needed
1/4-1/3 cup of non fat greek yogurt 
1/2 tsp vanilla extract or extract of choice some stronger ones use less like anise
1/4 tsp cinnamon spice or spice of your choice
dash of salt 
1 tbsp of monk fruit sugar replacement or one of your choice 

Mix well  to combine and store overnight in refrigerator. It is meant to be eaten cold but can be heated if desired .
You can changed up the extracts  and spices to change up the flavors

2 tbs of pure pumpkin and use pumpkin pie spice and more sweetener
2 tbsp of pb 2 
use Premier Protein instead of milk  just note the points. 
I like to add fresh fruit in the morning 
Banana mashed , apple , pinapple




Cracked Wheat Greek Salad

Greek Salad Dressing:
2 cloves crushed garlic
1/4 tsp salt (combined with garlic to form a paste)
1 1/2 tsp Dijon mustard
1/2 c olive oil.  - I use 1/3 cup
2 T fresh lemon juice
1/2 tsp sugar
5 T red wine vinegar. -  I used 6 tbsp
1/2 tsp oregano (I use 1 tsp)
1/2 tsp basil
  Make dressing and put asiide

1 1/2 cup of cracked wheat  - or Bulgar
I placed cracked when in my instant pot with equal amount of water and some garlic and salt cooke on low pressure for 12 mins . you can also make on stove top. Google for directions ( that what I always  do)

3 roma tomates   dicen
3 green onion sliced thin
1/2 of a seedless cucumber diced
3 ribs of Clery diced
12 asparagus spears diced
1 can of rinsed and drained chick peas
some calamata olives ( I  did not have any so they are not figged in to the points)
I topped with some fresh Basil 

Chop and drop all veggies in your bowl add cooked wheat and add dressing  and toss until combined. You can serve as a side salad or nice entree as well,
I added my feta cheese to my individual portion to control the points and it holds up better
1/2 cup in 2 sp on blue  1 cup is 5 sp on blue

Carrot Cake Donuts

1/2 cup of pumpkin flax kodiak mix
1/2 cup of unsweetened cashew milk
1/4 cup of egg substitute or 1 large egg
2 tbsp of nf Greek yogurt 
1/4 tsp of cinnamon
1/2 tsp vanilla extract (optional)
1 tsp baking powder
1/2 cup of shredded carrots ( I cooked in micro wave for a minute )
2 tbsp of Sukrin Gold brown  sugar replacement

Combine everything well and let sit for a few minutes. Preheat oven 350 degree
. Spray your donut pan well. Pour batter between all 6 donuts cavities.
Bake for 11 mins and check with a toothpick for doneness,

Make glaze or roll donuts in cinnamon and granular sugar replacement 
use whipped cream cheese to fill hole as much as you like just remember it has points
 1 sp on all plans for the plain donut 
toppings may or may not add points depending on what you use
