Peach Amaretto Chia Seed Jam - Sugar Free

 4 very large peaches approx. 5 cups peeled and chopped

1/4 cup of water

1/4 cup of brown sugar replacement  I uses swerve 

dash of salt

1/4 tsp cinnamon 

1 tbsp of amaretto mixes with 2 tsp of cornstarch to make a slurry  ( 3 sp) 

1 tbsp of Chia seeds  ( 2sp)

Place your peaches and water in a large heavy bottom put and bring to a boil for about 25 mins , I used a potato masher and mash them to my liking . ( you can make it as chunky as you like) I them added the remainder of the ingredients and let simmer for 5 mins on low . Keep stirring . Let cool and place in fridge  for up to 2 weeks . 

The whole recipe is 5  sp on all plans  for the amaretto and the cornstarch .  If you just use a few tbsp at a time you should be fine to count as zero .

Cinnamon Roll in a Mug

 1/ 4 cup of all purpose flour or kodiak pancake mix

1/4 tsp baking powder

2 tbsp of unsweetened vanilla cashew milk or milk of choice 

1 tbsp of sugar free pancake syrup

1/4 tsp vanilla extract

dash of salt

1 tsp light butter

1/2 tbsp of brown sugar substitute mixed with 1/4 tsp cinnamon 

Spray a microwave mug well with cooking spray . Add all ingredient and mx well , If too think you may add a touch more milk to give you a nice batter.

Top with another n 1/2 tbsp brown sugar substitute mixed with 1/4 tsp cinnamon swirl with a knife on top

cook in microwave for 1 minute 25 seconds . 

4 sp on all Plans

Chai Spiced Mini Pancake Muffins

 1/3 cup Trader Joes Protein pancake mix 

1/3 cup unsweetened vanilla cashew milk

1 egg

1 tsp baking powder

dash of salt

1/2 tsp cinnamon

1/2 tsp cardamom

dash of ginger powder

1 tsp vanilla extract

dash of flavor god buttery cinnamon roll (optional)

1 tsp of crushed nuts ( optional )

Pre-heat oven @400 Mix all the above in a bowl and let sit for 5 mins. Then place in a 12 mini muffins  tin with liners and bake for 10 mins, you can eat them as is with sugar free syrup or you can glaze with some powdered monk fruit sugar replacement mixed with cashew milk like I did for zero points

12 mini muffins for 3 sp on Blue and Purple and 5 on green if you add nuts like I did them I added a point on all plans .

Chocolate Party Cake Loaf

 1 bananan mashed 

1 tsp cake batter extract 

3 tbsp egg substitute or  1 large egg

dash of salt

1 tsp baking powder

1/4 cup of all purpose flour

1 1/2  tbsp of coco powder of choice I used the black coco powder

 1 tsp  of instant coffee ( optional )

1/4 cup of Lakanto Monk fruit sugar substitute granular 

1 tbsp of rainbow sprinkles

Pre heat oven to 350 degrees

Mix everything well and place in a mini loaf pan  that has been sprayed with no stick spray . 

Sprinkle with 13 lily chocolate chips and  a few more sprinkles

Bake for 27 minutes . Check with a toothpick for doneness. 

Cake is good as is. I did frost my cake with 2 tbsp of pb2 mixed with 1 tbsp pf powdered monk fruit sugar substitute . I added cashew milk to get the  consistency I was looking for for frosting . You could also use marshmello  fluff . just adjust your points . The Pb Frosting will add 1 sp to your 4 sp cake on all plans based on this specific recipe .

Matcha iced Latte

 2  tsp of matcha powder

1 cup of unsweetened vanilla cashew milk ( milk of choice ) as long as its 1 sp or adjust points

1 tsp vanilla extract

2 tbsp of monk fruit granular sugar substitute 

Place all ingredients in magic bullet with 1/2 cup of ice and blend well . Place in a. glass filled with ice and serve with a squirt of redi whip .

Creamy Balsamic Vinaigrette Low in Points

 1/2 cup non fat Greek Yogurt

1/2 cup balsamic vinegar 

2 tbsp of extra virgin olive oil

1 tsp garlic  minced or grated or just use powder

2 tsp of Dijon mustard 

dash of salt and pepper


Mix everything in a mason jar well and store in fridge for 10 days

2 tbsp is 1 sp 3 tbsp is 2 sp and 4 tbsp is 3 sp on Blue and Purple

Zero Smart Point Root Beer Float

1/2 packet of A & W  root beer water enhancer  ( use more if you wish)
1/2 cup of cold water 
1 cup of ice
1/2 cup of unsweetened vanilla cashew milk

Mix water with root beer packet and mix well. Add milk and ice and mix well. You can add to a magic bullet if you wish to make it a frozen float.
Top with Redi whip 

Zero points on all plans
