Pumpkin 2 ingredient Dough Bagels

1 cup all-purpose flour
2 tsp of baking powder
1/2 tsp salt
1/2 cup of nonfat Greek yogurt (drained well)
1 egg
3 tbsp of pumpkin puree
1 tsp pumpkin pie spice
6 tsp of monk fruit sweetener or sweetener of your choice

In a large bowl add flour, baking soda, and salt and mix well. Add the rest of your ingredients and combine well and separate into 4 buns. Place on a well sprayed baking sheet and brush buns with egg wash. I sprinkle monk fruit golden (brown sugar substitute ) lightly and add some pumpkin seeds and crushed hemp hearts and a/ few lily chips on top, (not necessary but zero in points and adds a texture ). Place in a preheated air fryer or oven 375 degrees and cook for 20-25 mins.
They freeze well. I place mine in a sandwich bag and then in a larger plastic bag.

Home Made Ranch Dressing using a house made ranch mix and home made buttermilk

Ranch Dry  Mix

1 tbsp powdered buttermilk                                                             1 tsp light mayo
1/4 tsp dried dill                                                                       1/2 cup non fat greek yogurt  drained
1/4 tsp garlic powder
1/2 tsp chives
1 tsp parsley
1/4 tsp Trader  Joe's onion salt
1/4 Trader Joes 21 seasoning salute or mrs dash
dash of chipotle pepper powder
mix all ingredients above

Buttermilk
1/2 cup of 1% milk
2 tbsp white distilled vinegar
mix and let stand 5 mins
1/4 tsp xantham gum

combine your home made buttermilk with your homemade ranch mix and combing well.
Add 1  tbsp lite mayo and 1/2 cup of non fat greek yogurt and combine well. Add 1/4 tsp of xantham gum to thicken 
Chill for 1 hour
The whole jar is 5 smart points on Blue and Purple . Smart Points on Green 6 smart point for the whole jar. Use and point as you see fit.

Buffalo Deviled Eggs

10 hard boiled eggs
1 tsp light mayonnaise
2 tbsp hot sauce
scant 1/4 cup non fat greek yogurt
1 tbsp dijon mustard
pepper/salt (butter flavored popcorn salt would be great too)

toppings:
Blue cheese crumbled
shaved celery and carrot

Slice eggs in half and remove yolk and put into bowl. Mask yolks then add the rest of the ingredients and mix well. Place back in egg half and add toppings and sprinkle with paprika.

2 egg half are zero on blue and purple and 2 on green.

Grits Bread (mini loaf)

  1 Banana mashed
1 egg
3 tbsp or 1/4 cup of white grits( I used Bob's, Red Mill 3smart points
EDIT Try using Instant grits instead 1 packet THIS WORKS MUCH BETTER AND TASTES BETTER
1 tsp butter extract
 2  tbsp    monk fruit sweetener
1/4 tsp salt
1 tsp baking powder

Mix everything well. Spray a mini loaf pan with non-stick spray add your mixture and bake 375 degrees for 25 mins or until a toothpick comes out clean. Cool for 10 mins and then removed and let cool on a wire rack

The whole mini loaf is 3 sp on blue  5 sp on  green

Crock Pot Taco Chicken

3 nice sized chicken boneless breasts
1 tbsp of taco seasoning
1 and 1/2 cup of salsa
1 can or rinsed and drained black beans
1 can of corn drained

Place your crock pot on hight and spray the bottom with cooking spray. Place your chicken on the bottom and cover  with the taco seasoning and then with the salsa. Cook on high fir 4 hours. Add the beans and corn and continue to cook for another hour. Then go in a shred the chicken and serve.
You can serve it over rice of your choice or in a taco or a tortilla. I also love it on a salad too!
Zero points on Blue and Purple and you have to count it all on the green plan,

Turkey Bolognese

1 pound of leanest turkey                                   1 1/2 tsp of dried sage
1 28oz can of crushed tomatoes                     2 tsp of poultry  seasoning
1 1/2 cups of diced onions                              1 tsp of red pepper flakes
1 large carrots diced                                        salt and pepper
2 ribs of celery diced                                        1 chicken bouillon with another 1/4 water
2 tbsp of tomato paste
1/2 cup water
2 tbsp of crushed garlic
1 tbsp olive oil


Add your olive oil to your hot pan and add your celery, onion and carrot.Cook for about 5 mins until they are getting tender and the onions are becoming translucent , add your turkey and brown. Add the crushed  tomatoes and the rest of the ingredients  and simmer on low for about an hour to an hour and a half. Serve over your favorite pasta!

The only pointed item is the oil. It is 4 sp on all plans if you count it.

Cabbagge Soup

Chicken Broth 48 ounces  3 sp                                1 tbsp crushed or chopped garlic
5 ribs of celery                                                   1 tsp black   pepper
1 leek or 1 large onion chopped                         1 tsp dried dill weed                                          
2 large carrots chopped                                       parm cheese to taste
1 28 ounces can of crushed tomatoes 1/4 cup of water to rinse the can
 2 tbsp tomato paste
1 med head of cabbage sliced
1 envelope of dry onion soup mix 3sp

Add broth to your pot, add dry onion soup mix, celery, carrots, and leeks or onions and black pepper. Cover and bring to a boil and simmer for about an hour. Add the cabbage and dill and let it cook down for about
30 mins at a low simmer. Sever with some grated parm cheese and enjoy

the only thing to count would be the dry onion soup mix and the chicken broth.  You get about 10-12 servings of this soup. This is considered zero points for a serving of soup. I am a rebel and don't count chicken broth or onion  soup mix, You do what you need to do .
