Tuna Meal on a Cheddar Bay Biscuit

Cheddar Bay Biscuit
1/2 AP Flour
1 tsp baking powder
1/4 tsp salt
1/2 cup scant  of NF Greek Yogurt ( I use a bit less yogurt )
1/4 cup FF cheddar cheese
1/2 tsp old bay seasonings

Mix well and make 2 bagel buns . Bake @ 375 for 20 mins or so.

Splint your buns and toast .

Tuna Filling
1 can of white solid albacore water packed tuna
light mayonnaise 4 tsp
old bay seasonings 1/2 tsp
Garlic powder 1/4 tsp
grated raw onion to taste
horseradish  1 tsp to 1 1/2
hot sauce to taste
Mix filling ingredients and top your toasted biscuit . Top with a slice of tomato and top with your choice of cheese. ( cheese has points so make sure you know how much you use)
I use 2 tsp of lite mozzarella and a tbsp of FF cheddar.
Broil until cheese melts.

1 serving is 5 sp on Blue and Purple , on Green you need to count your tuna.

Bear Claw Danish

Dough
1/2 cup of All purpose flour
1/4 cup of non fat greek yogurt
1 1/2 tsp baking power
1/2 tsp salt
1 egg
2 tbsp monk fruit sweeter sugar replacement granular
1/4 tsp cinnamon

Remove 1 tbsp of flour to save for rolling and board.
Mix the dough ingredient until soft dough forms.
Roll out onto sprayed parchment paper of silicone baking Matt

Preheat my oven @ 375 on convection setting  (air fryer)

Filling
 I spray the dough with non stick butter flavored spray and a few tablespoons of monk fruit sweetener granular  and cinnamon to your taste . I also added about 13 lily chocolate chips.
With the help of your parchment paper roll into a log carefully. I slice into 2 equal parts and separate.
Place your rolls with the parchment on a baking sheet , I then spray with more butter non stick spry and sprinkle with the golden monk fruit sugar replacement and some cinnamon.
I baked for 15 minis and I then rotated the pan and bake for another 10.

for both 5 smart points of blue and purple. Green you have to add the egg and yogurt,
half or 1 roll I had to count as 3 sp Blue and Purple

Glaze
after you cool for a bit( you want  to eat this warm)
2 tbsp of monk fruit powder sugar replacement a drip of vanilla and a tsp or so of unsweetened almond or cashew milk to make a glaze and drizzle on ( its zero points and just WOW)

Ham and Bean Soup in the instant pot

1 ham bone
1 1/2 cup diced onion
1 1./2 cup  chopped  celery
1 cup chopped carrots
2 potatoes chopped
1 lb bag of dried beans I use pinto (navy works best )
2 tbsp chopped garlic
6 cups of stock  I used 4 cups beef and 2 cups water
2 bay leaves


Place everything in the instant pot . Close valve and set on chili /bean setting for 50 minutes. NPR for half an hour . Remove ham bone and get off as much meat as you can and add back to soup and enjoy.
Points vary I just counted 3 sp per cup

Party Cake Mini Loaf

banana mashed
1 egg
1/4 cup of flour 

1/4 tsp salt 
1 tsp baking powder
1 tbsp of monk fruit sugar replacement 
1 tsp cake batter extract 
3 tsp of rainbow sprinkles (2 in batter 1 on top)


Combine all ingredient  and place in a sprayed mini loaf pan and bake @ 350 degree for 30 minutes ..

4 sp on blue and purple and 6 on green

Chicken Parmesan Biscuit Bake

2 tube of the small biscuits.                  
2 chicken breasts
1 16 oz can of tomato sauce
1/4 cup seasoned bread crumbs
1 cup part skim mozzarella cheese
garlic
Italian seasonings of choice


Chop chicken into a very small dice and cook with a small amount of olive oil and add about 1 tbsp of chopped garlic and salt and pepper.
Cut biscuits in 4 pieces and arrange in the bottom of a 13X9  pan sprayed with non stick spray. top with chicken , sauce , cheese and bread crumbs and bake at 350 for 30 minutes .
serves 6 for 9 sp on blue
you can lower the points by using 1 can of biscuits would take it to 6 sp a serving

Easter Bread from my Italian Momma

1/2 cup of milk. ( I used 1% )
1/2 cup of sugar ( I used monk fruit)
1 tsp salt
1/2 cup shortening
Grated peel of 2 lemons or oranges
2 pks of active dry yeast
1/2 cup of warm water
2 eggs at room temp
4 1/2 cup of all purpose flour
egg wash
colors sprinkles


Scald milk and then add sugar, shortening , salt and fruit peel. Cool to luke warm.
Sprinkle yeast on warm water and stir to dissolve. Ounce your yeast is activated add milk mixture and both eggs and mix to combine.   Add 2 1/2 cups of flour  to a bowl on mixer with a dough hook attached, Add milk mixture  and combine until dough begins to form and add the remaining flour a little at a time until combined . KEEP IN MIXER AND KNEEED IN MIXER FOR 5 MINS or you you can knead on a floured  surface. Place dough in a old bowl and place in a warm place for one hour , Punch down and either place in2  loaf pans or make into braid  and cover for another half hour to rise. Pre-heat oven to 375  . Brush with egg wash and add sprinkles' and bake for 20 mins
after bread is done remove from oven and remove from pans and cool completely,
Make a glaze with powered sugar and milk ( I use powdered monk fruit and water ) and glaze bread.


In video I halved this recipe and made I loaf . If you get 14 slices it come to 3 sp on Blue if you get 12 slices its 4 sp on blue
