Irish Soda Bread - A WW recipe done DWD style (whole Wheat Soda Bread is what WW calls it in the App)

 1 cup of whole wheat flour

1 cup all purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon ( this was my addition it is not usually in Irish soda bread)

2 tbsp of canola oil  I used - 2 tbsp unsweetened apple sauce

3/4 buttermilk( I made my own with 3/4 cup 1 % milk and 1 1/2 tbsp of vinegar )

Raisins optional 1/3 cup. I did not add them so they are not in my points 

I did add some lily chips (1 sp worth )


Pre-heat oven to 325 

Combine dry ingredients in a large bowl then add your wet ingredients and combine to form a dough and knead . Free form on a parchment lined pan and bake for 45 mins .

Corn Muffin in a Mug

1 egg 

1 1/2 tbsp of NF  Greek Yogurt

1 tbsp of AP flour

2 tbsp of corm meal I used white but yellow can be used

2 tbsp of Lakanto Monk Fruit sugar replacement 

1 tsp of baking powder

dash of salt

1 tbsp of corn ( optional )

Combine all ingredient well. Spray a large mug with non stick spray and dump you mixture in. Microwave for 2 mins . Remove from mug and let cool.

3 sp on Blue and Purple and 5 on green ( use egg white to make it 3 sp)

Be a great breakfast toasted or with your favorite chili . Its a large muffin

Taco Chicken Bubble Bake

 2 chicken breast cooked and cubed

2 1/2 cup of salsa

2 tbsp  of taco seasoning or 1 packet

1/4 cup water

1/2 can of black beans 



In a large bowl add combine all ingredient above and mix well.

1 can of small biscuits cut into 4 pieces  and place 

in a 8x8 baking dish spray with non stick spray .

Top with chicken mixture  

Top with 1 cup of low fat cheddar cheese  and bake in a 350 degree oven covered for 35 minutes then uncovered for 5 mins more . 

I served with a quick caulimexi rice 

1 red bell pepper diced , I jalapeƱo pepper diced , 1/2 an onion diced ( sauce until tender ) add frozen riced cauliflower and some regular rice if you chose  but it is nt necessary , I did add 1 can of diced tomatoes and seasoned with taco seasoning and cumin to taste 

4 servings  6 sp per serving on Blue and Purple 11 on green

Pumpkin Peanut Butter Dog Treats

 1/2 cup of pure pumpkin

1 egg beaten 

3 tbsp of no sugar added peanut butter

combine well in a medium bowl.

Add

1 cup of whole wheat flour

and combine to form a soft dough , your hands are your best tools.

I formed into 1 tsp sized balls and place into my sprayed dog treat maker and cooked or 5 mins .

makes approx 40 mini bones 

Enjoy ! My Dog loved them .

You could roll and use a dog bone cutter and bake in a hot oven for a few minutes as well!

Honey Mustard Dipping Sauce

 1/2 cup of NF Greek Yogurt

1 tbsp of soy sauce

2 tbsp honey replacement I used harmless honey I have it linked in myAmazon Store

1 tbsp of rice wine vinegar or vinegar or your choice

1/2 tbsp monk fruit sugar replacement 

2  tbsp mustard of choice I mixed several different ones 

1/2  tsp garlic powder

1/2 tsp black pepper

dash of salt

Combine all and enjoy ! Feel free to taste and adjust to your liking , add more or less mustard and honey !

If you want to add to a salad I would add some olive oil (but you don't have to ) 

The only points come from the Harmless Honey its 2sp for 2 tbsp , unless you are eating half the dip I am not counting it. My whole recipe is 2 sp on all plans

Scone /Biscuit in a Mug

Wet Ingredients

1 egg

1 tbsp of nf Greek yogurt

2 tbsp of unsweetened apple sauce

1 tsp vanilla or extract of choice

2 tbsp of monk fruit sugar replacement 

DRY ingredients

1/4 cup of quick oats 

1 tbsp of ap flour

dash of salt

1/2 tsp cinnamon or spice of choice 

1 tsp of baking powder

Combine wet ingredients  and add dry ingredient and mix well . Place in a large mug and cook for 2 mins in microwave . Remove immediately  to a plate and top with 7 grams of sugar free caramel syrup or what ever you chose, 

3sp on blue , 1 sp on purple and 5 sp on green

Pumpkin Spice Mini Pancake Muffins - Made with Pumpkin Flax Kodiak Cakes Mix

 1/3 cup of Kodiak Power cakes pumpkin Flax power cakes mix   4sp

1/3 cup unsweetened Cashew or Almond Milk or milk of your choice adjust points if needed

1 egg or  3 tbsp of egg white or substitute  

1 tsp of baking powder

dash of salt

extract of choice

spice of choice

1 tbsp of nf Greek Yogurt 

 Pre-heat oven to 400 Combine all well and place in 12-13 mini muffins pan lined with liners  and bake 10 minutes. Glaze of you like . I use 1/2 cup of powdered monk fruit sweetener (lakanto ) dash of cream cheese extract or flavoring 2 tbsp of nf Greek Yogurt and a slash milk of choice. Make as thin or as thick as you like , it does not add an extra points.

4 sp on blue and Purple  for all the muffins and on green it depends if you use egg or egg whites
