Pasta Fagioli Soup

Ingredients

1 tsp olive oil                                                1 1/2 tsp of dried oregano
1 onion or leek diced                                    1 tsp salt
3 garlic cloves minced                                  1  15 oz can of cannellini beans
1 29 oz can of Tomato sauce                         1  15 can navy beans ( optional)
5 1/2 cups of water                                        1/3 cup grated Parmesan cheese
1 tbsp  dried parsley                                       1 pound of elbow pasta or ditalini or small shells
1 1/2 tsp dried basil


Directions

In a large pot on medium heat cook onion in olive until translucent. Stir in garlic and cook until tender. Reduce heat and stir in tomato sauce, water, herbs, salt, beans, and cheese. Simmer for 1 hour.
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and stir into soup. Or you can just leave on the side

Jambalaya

2 large boneless breasts cut in small chunks
1 ring  @ 6 oz of hillshire farms turkey kielbasa sliced and  chunked
1 pound of medium shrimp peeled and deveined
2-3 cups of turkey stock
I small onion diced
2 ribs of celery sliced
1 bell pepper diced
1 14.5 oz  can of diced tomatoes
2 tbsp of tomato paste
1 tsp  oregano
 1/2 tsp  sweet paprika
 1/2 tsp  smoked paprika
 1 tsp  Tony Chachere Creole seasoning
2 tbsp garlic minced
1 tsp olive oil
rice on the side ( I made mine in the instant pot)

In  a large skillet heat your oil and add your onions, celery and peppers and cook until tender about 6 mins, Add your chicken and cook until no longer pink then add you kielbasa  and cook for about 4 mins. Add your garlic, stock , tomatoes , paste and seasoning . Simmer on low for about 20 mins. Add shrimp and cook until cooked through. I placed my rice on the bottom of a bowl and add about a cup of the mixture .

Serves @ 6-8 servings
2 sp on blue per  1 -1 1/2 cup of

Hummus with sautéed mushrooms

Make my hummus here on the blog.
Place in a bowl
8 oz of mushrooms of your choice chopped
1 tsp oil oil
garlic
1 tbsp balsamic vinager
 

Add oil to a hot skillet and add mushrooms and garlic and cook until tender, Add balsamic vinegar and cook until mushrooms are coated . Place directly on hummus and serve with chips

Pickled Carrots

1 very large carrot or enough to full large  jar cut into thick strips
Pickling ingredients
1 1/2 cups of water
1 1/3 cups of white vinegar
1 tbsp minced garlic
1 1/2 tbsp of dried dill
1 tbsp pickling spice
3/4 tbsp salt
1/2 cup Splenda sugar substitute

Place your carrots in your jar. Add all the pickling ingredients in a medium pot and bring to a boil and boil for about 2 mins. Pour over carrots in jar and let cool b4 placing in refrigerator . Should last in the fridge for 2 weeks.

There are zero smart points on all plans. The Splenda is 1 smart point.

Bread Pudding in a Mug

1 slice of low calorie bread,  I use the 647 Italian.      1/2 tsp baking powder
1 egg
49 grams of 1% fat cottage cheese
1 1/2 tbsp of unsweetened  vanilla almond or cashew  milk
1/2 tsp vanilla extract
2 tbsp of monk fruit sweetner
1/4 tsp cinnamon

Spray your mug  with spray, ADD your egg, milk and cottage cheese mix well. All the rest of your ingredients and mix well. Add your bread and make use it is nice and submerged. Cook in your micro wave for 1 minute . Mix again and cook for another  1 minute. I did cook it again for another 30 seconds. Place in a bowl and add toppings of choice.

2 sp on Blue and Purple and 4 on green.

Pumpkin 2 ingredient Dough Bagels

1 cup all-purpose flour
2 tsp of baking powder
1/2 tsp salt
1/2 cup of nonfat Greek yogurt (drained well)
1 egg
3 tbsp of pumpkin puree
1 tsp pumpkin pie spice
6 tsp of monk fruit sweetener or sweetener of your choice

In a large bowl add flour, baking soda, and salt and mix well. Add the rest of your ingredients and combine well and separate into 4 buns. Place on a well sprayed baking sheet and brush buns with egg wash. I sprinkle monk fruit golden (brown sugar substitute ) lightly and add some pumpkin seeds and crushed hemp hearts and a/ few lily chips on top, (not necessary but zero in points and adds a texture ). Place in a preheated air fryer or oven 375 degrees and cook for 20-25 mins.
They freeze well. I place mine in a sandwich bag and then in a larger plastic bag.

Home Made Ranch Dressing using a house made ranch mix and home made buttermilk

Ranch Dry  Mix

1 tbsp powdered buttermilk                                                             1 tsp light mayo
1/4 tsp dried dill                                                                       1/2 cup non fat greek yogurt  drained
1/4 tsp garlic powder
1/2 tsp chives
1 tsp parsley
1/4 tsp Trader  Joe's onion salt
1/4 Trader Joes 21 seasoning salute or mrs dash
dash of chipotle pepper powder
mix all ingredients above

Buttermilk
1/2 cup of 1% milk
2 tbsp white distilled vinegar
mix and let stand 5 mins
1/4 tsp xantham gum

combine your home made buttermilk with your homemade ranch mix and combing well.
Add 1  tbsp lite mayo and 1/2 cup of non fat greek yogurt and combine well. Add 1/4 tsp of xantham gum to thicken 
Chill for 1 hour
The whole jar is 5 smart points on Blue and Purple . Smart Points on Green 6 smart point for the whole jar. Use and point as you see fit.
