Lemon Poke Cake

 I box of sugar free yellow cake mix

3 eggs

1 cup water

1 tsp vanilla extract

1 unsweetened applesauce  cup

1/4 cup of nf Greek yogurt

juice and zest of 1 lemon

Mix all wet ingredients and add cake mix to combine 

Pe heat oven to 350 

Place in prepared pan of your choice I use 9x13 and bake according to box (35 mins)

Check with a toothpick to make sure it is baked

Cool completely 

1 box of sugar free instant  lemon pudding 

1 cup of unsweetened  cashew milk ( you can use any milk)

1 tbsp of limoncello liquor 

combine  pudding, milk and liquor well and let sit of 20 mins, 

Brush your cake with 1 tbsp limoncello 

poke holes with the back of a wooden spoon  and then spread pudding over cake

You can add cool whip to the whole cake if you choose but it will change the point that I get.

I figured 12 slices at 4 sp each on all plans and then I added 1 sp of whipped cream

Strawberry Shortcake in a Mug

Wet Ingredients

1 egg

1 tbsp of nf Greek yogurt

2 tbsp of unsweetened apple sauce

1 tsp vanilla or extract of choice

2 tbsp of monk fruit sugar replacement 

DRY ingredients

1/4 cup of quick oats 

1 tbsp of ap flour

dash of salt

1 tsp of baking powder

Combine wet ingredients  and add dry ingredient and mix well . Place in a large mug and cook for 2 mins in microwave . Remove immediately  to a plate and let cool . Place  sliced Strawberries in a bowl top with some monk fruit . Cut cake in half add berries and top with Whipped cream.

 The amount of whipped cream will determine your final points 

3sp on blue , 1 sp on purple and 5 sp on green ( for the cake only)  add cream points .

Quick Pickled Jalapeños

 4 fresh jalapeño sliced ( take seeds out if you don't want them too spicy )

1 cup while vinegar

1/2 cup water

2 tbsp of chopped garlic 

2 tbsp of monk fruit sugar replacement  

1/4 tsp salt

Mix all together in a glass bowl or jar , let stand at room temp for about 15 mins . Store in fridge and they will keep for a few weeks.

Chicken Chili using leftovers

 1 pound of cooked boneless chicken breasts chopped

1 can of back beans drained and rinsed

1 can of corn drained 

1 can of fire rotted diced tomatoes 

1 cup of water mixed with a chicken bouillon 

1 cup salsa

1 tsp of taco seasonings  or to taste

1 tsp of chili powder or to taste

1 tsp of garlic jalapeño  powder or to taste or just garlic 

combine all in a large skillet and heat

add 1 cup of cooked quinoa or rice 

heat through and server 

the whole recipe is 6 sp on Blue and zero on purple green  you have to count chicken   and corn and beans .

Cracked Out Egg Salad on a Grits Mini Loaf

 2 hard boiled eggs mashed

1 1/2 tsp bacon bits

2 sun-dried tomatoes chopped fine ( not in oil)

a few blades of chopped  chives or dried

non fat Greek Yogurt  ( you could use light mayo)

1 tsp powdered ranch dressing mix 

Combine all and add spices of your choice I added Every thing but the bagel 

Spread on your toasted loaf or bagel 

zero Smart points on Blue and Purple 4 on Green 

Grits Loaf

Grits Bread (mini loaf) 

  1/3 cup of unsweetened apple sauce 
1 egg
3 tbsp instant grits
1 tsp butter extract
 1/2 tbsp   monk fruit sweetener
1/4 tsp salt
1 tsp baking powder

Mix everything well. Spray a mini loaf pan with non-stick spray add your mixture and bake 375 degrees for 25 mins or until a toothpick comes out clean. Cool for 10 mins and then removed and let cool on a wire rack

The whole mini loaf is 3 sp on blue  5 sp on  green

Sweet Air Fryer Chick Peas

 1 can of chick peas drained - do not rinse beans and save the juice

2 tbsp of sugar replacement 

1/2 tsp cinnamon

pre-heat your air fryer to 400 degrees

place your chick peans on a parchment lined baking pan and air fry in 5 min increments until they are lightly browned ( mine took 18 mins)

I then placed chick peas in a bowl and I added 1 tbsp of the saved chick pean liquid and tossed to coat. I sprinkled the cinnamon mixture over top and tossed . I then placed back on the tray and airfryed another 5 minute  for 2 cycles and tossed several times until they were done or my kitchen was smoky . lol yes they  were smoky but not burnt. DO NOT LEAVE THEM UNATTENDED .

Zero points on Blue and purple but WW tells you to count them as you may over eat them check your app.

Fudgy Brownie in a Mug

 1 tbsp flour

1 1/2 tbsp of quick oats

2 tbsp of cocoa powder of your choice - I used dark

2 tbsp of monk fruit sugar replacement 

2 tbsp unsweetened cashew milk or milk of choice zeso points

2 tbsp unsweetened apple sauce 

dash of salt

1/2 tsp instant coffee

lily chips

combine all in a  mug and microwave for 80 seconds or until done  ( it is a fudge brownie )
