Sundried Tomato, Basil and Zucchini Quiche Cups or Mini Quiches

Recipe:
1 1/2 cups of shredded Zucchini
1/4 cup chopped onion
3 oz of Trader Joe's Light shredded mozzarella
1/4 cup all-purpose flour
1 tsp baking powder
8 large eggs
1/2 cup NF Greek Yogurt
2 tbsp chopped sundried tomato
combine all ingredients and place in regular muffin tins sprayed with Pam. Bale 350 degrees for 24 mins. Check with a toothpick for doneness. makes 12
2 mini quiches for 1 smart point on all plans

Mexican Dark Chocolate Banana Bread Mini Loaf

This is my version of @ pound dropper banana bread.
       Mexican Dark Chocolate Banana Bread
1 banana mashed
1 egg beaten
1/4 cup of quick oats
1/2 tsp cinnamon
1tsp Vanilla extract
1 tsp unsweetened dark chocolate cocoa powder
2 tsp Splenda
1/2 tsp baking powder
dash of salt
1/2 tsp of cayenne pepper( you can leave this out if you don't like spice)
mix everything in a bowl. Place in a mini loaf pan sprayed with nonstick spray.  I to[ mine with 13 of the lily sugar-free choc chips for zero, 1 tsp salted toasted pumpkin seeds and 1 tsp of hulled hemp hearts. Bake in a 350-degree oven for 25 mins and check for doneness, Enjoy the whole thing for 2 smart points or just half for 1. I keep mine in the refrigerator or freezer

Cream of Wheat Mini Loaf

Cream of Wheat Breakfast Mini Loaf 
1 banana mashed
1 egg beaten
4 tbsp of Cream of wheat  dry mix
1 tbsp surkin Gold brown sugar substitute
1/2 tsp cinnamon
dash of salt
1 tsp baking powder
2 tbsp of sugar-free pancake syrup or 1 tsp of maple extract
13 lily chocolate chips
Mix everything well and place it in a mini loaf pan sprayed with Pam.
Sprinkle the lily chips on top. Bale @350 degrees for 30 mins.
For breakfast slice in half and toast and spray with I can't believe its not butter spray and add sugar-free Jelly if you like just adjust the points.
4 points for the whole loaf

Slow Cooker Chicken Cacciatore Zero Points

3 Large Boneless Skinless Chicken Breasts
1 28oz can of crushed tomatoes
4 small bell peppers chopped
1 medium onion diced
1 small container of sliced mushrooms or one can
4 cloves of garlic minced
1 tsp of dried basil
1 tsp of dried Italian seasonings
salt and pepper to taste
1 tsp dried red pepper flakes
1 tsp olive oil
parm cheese to taste just check for points

Place crockpot on high and place your olive oil in and place your chicken along the bottom and top with your crushed tomatoes and your veggies and herbs and spices as well as the garlic Cook on high for 4 hours and then shred or cut up your chicken and serve over your pasta of choice or rice.

Makes 8 servings for  zero points you just need to count the pasta or rice

Anchovy Pasta Sauce- An Italian Christmas Eve Tradition

2 cans of anchovies in olive oil
2 cans of tomato puree 28 oz each
4 cloves of garlic minced
2 tbsp of fresh basil and 2 tbsp of fresh parsley chopped
1 cup of water
red pepper flakes/black pepper to taste
I added  2 tbsp of Kalamata olives
Check for salt




In a large pot place the anchovies with the olive oil in the pot on semi hight heat and let the anchovies melt into the oil. After they have melted add the rest of the ingredients and let simmer for about 25 mins and I usually place in a crock pot until ready to serve.
In our family we traditionally use angel hair pasta  when we serve.

WW points are zero for the sauce I just count the pasta

Baccala Salad

2 pounds of salt cod (baccala)
1/4 cup of EVOO
juice of 2 lemons and zest from 1
20 olives , I used kalamata olives
2 cloves of garlic chopped
3 tbsp of fresh basil chopped
1 tbsp of fresh parsley chopped
1 tbsp of capers
black pepper , red pepper flakes and salt to taste

Place fish in a large pot of fresh water and place in a cold area. Change the water frequently for several days.
Place fish in a large pot of water and bring to a boil and boil for about 15 mins on a low simmer. Drain and let cool a bit. In a large bowl add the rest of your ingredients and combine well. Flake the fish and add to the bowl and toss well.  Keep kool and serve at room temp.

For WW I just count the olive oil and the whole recipe is 17 points so give it a few points depending on the amount you use.

Fennel/ Anise Salad 4 sp for the whole salad

1 fennel bulb
1 tbsp of extra virgin olive oil
salt/pepper/ red pepper flakes to taste
fennel fronds

Cut off top of fennel and slice bulb thin removing  core. Toss with EVOO and seasonings and marinate for a few hours at room temp. I add a few of the fennel fronds  Enjoy!
