Marshmello Peanutbutter Oatmeal Bake - Hungry Girl Recipe from Spring 2021 Magazine

Ingredients:

3 cups old-fashioned oats

1/2 cup plus 2 tbsp  pb2 or powdered of your choice 

1 1/2 tbsp. chia seeds

2 tbsp of brown sugar substitute 

2 tsp. cinnamon

2 tsp. baking powder

1/4 tsp. salt

1 1/2 cups unsweetened Cashew milk or vanilla almond milk

1/2 cup unsweetened applesauce

1/2 cup (about 4 large) egg whites or fat-free liquid egg substitute

2 tsp. vanilla extract

Topping 

2 tsp creamy peanut butter the 2 tbsp pb powder from above

1/2 cup marshmello cream 


Directions:

Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

In a large bowl, combine oats, powdered peanut butter, chia seeds, sweetener, cinnamon, baking powder, and salt. Mix well.
then add  almond milk, applesauce, egg whites/substitute, , and vanilla extract. Mix until uniform.

 Transfer the mixture to the baking pan, and smooth out the surface..

Bake until top is light golden brown and entire dish is cooked through, about 35 minutes. Cool then combine your pb and 
powderd pb with 2/1/2 tbsp of water to make a pb drizzle. Spread your marshmello  on top of bake and then drop pb mixture and swirl to combine . 

MAKES 6 SERVINGS

7 sp on Blue 3sp on Purple and 8 sp on Green as per Hungry Girl
